We make our own seltzers at the brewery. Most seltzers are made using plain old sucrose (table sugar) that you can buy at the store. We do things a little different at PBC. We use 50% sucrose and 50% dextrose (corn sugar) which are both fully fermentable, but we think using two sugars instead of one make happier yeast! Did you also know many of those flavored cocktail drinks in cans (flavored malt beverages, FMB) are really just seltzer with added extracts to make them mimic flavors of the real cocktails made with distilled liquor?
