Terpenes (Hydrocarbons) Myrcene: Earthy, spicy, herbal, and resinous; prominent in IPAs but evaporates quickly during boiling Humulene: Woody, spicy, and earthy; common in noble hops like Hallertauer Caryophyllene: Peppery, woody, and herbal; also found in cloves and black pepper Linalool: Sweet, floral, and citrusy; key in dry-hopped beers
